Chorizo and Garlic spaghetti with balsamic roasted Cherry tomatoes


Serves 2


240g cherry tomatoes
190g spaghetti
5 tbsp. Olive oil
1/2 cup Chorizo, thinly sliced
2 tbsp. balsamic vinegar
3 garlic cloves, finely chopped
2 Thyme sprigs
1 tsp. tomato paste
2 fresh red chilli, sliced
Soft feta cheese, crumbled
salt to taste


Preheat oven to 180C. Toss tomatoes in 1 tbsp. Olive oil, balsamic vinegar, thyme and seasoning. place on a baking tray and roast for 15 to 20 minutes. Cook the spaghetti following the package instructions.

In a wide pan heat olive oil add sliced chorizo and garlic fry on low heat for a couple of minutes, add tomato paste and stir. Drain the pasta and add to the pan, add the roasted tomatoes and their juices, remove thyme. Season and toss to combine, garnish with red chilli and feta and serve.
