1 bunch fresh Basil
1/2 bunch flat leaf Parsley
3-4 Cherry tomatoes
2 small fresh red chillies
2 pieces of Anchovies
3 garlic cloves
2 inch piece of Parmesan cheese
1/2 – 1 cup Extra virgin olive oil
handful of nuts- (any) Almond, Walnut or Pine nuts- toasted
Salt and pepper
Put all the ingredients and half of olive oil in a food processor and combine, add the rest of the olive oil slowly while processing till you get the desired consistency, ideally a medium spreadable consistency.
Transfer in an airtight jar and store it in the fridge for up to a week.
Use it as a dressing for salads, as a dip, for sandwich, pasta, pesto chicken, pesto puff pastry!
