Bocconcini, Tomato and Avocado Salad

 

I am a huge fan of salads and my meal isn’t complete without one, and I don’t care what kind as long as I have a bowl of salad in front of me. This one is my all time favourite and with Christmas just around the corner, it makes for a perfect side for your Christmas lunch. Simple, flavourful and a true Classic!

Serves 4
Ingredients –
2 – Beefsteak tomatoes
220 grams – Fresh bocconcini mozzarella
2 – Avocados
20 – Black olives
Few fresh Basil leaves for garnish

Dressing –
4 – tbsp Olive oil
1 1/2 – tbsp white wine vinegar
1 – tsp Mustard (coarse grain)
salt and pepper

Method –
Cut the Avocados into half and remove pits and skin, cut into thick slices. Cut the tomatoes into wedges. Drain and tear the bocconcini into thick pieces.

Arrange the tomatoes, avocado, bocconcini and olives in a large serving dish. Mix the dressing ingredients in a bowl and drizzle over the salad. Garnish with Basil leaves and serve immediately.
